Chardonnay was the most popular white grape through the 1990's. It can be made sparkling or still. Food pairings: a good choice for fish (even salmon) and chicken dishes. Districts: chardonnay makes the principle white wine of Burgundy (Bourgogne, France), where it originated. Chardonnay is versatile and is grown with success in most viticultural areas under a variety of climatic conditions. Yet it only amounts to 2 percent of the world vine areas. Total chardonnay vines cover more than 160,000 hectares (400,000 acres). The biggest states were in 2005: U.S.A.: California: 44,509 ha; Oregon and Washington state: 3,200 ha France: 35,252 ha Australia: 22,528 ha Italy: 11,800 ha Moldavia: 6,000 ha South Africa: 8,000 ha Chili: 7,500 ha Argentina: 5,155 ha Typical taste of the different types of chardonnay: voluptuous. Chardonnay wines are often wider-bodied (and more velvety) than other types of dry whites, with rich citrus (lemon, grapefruit) flavors. Fermenting in new oak barrels adds a buttery tone (vanilla, toast, coconut, toffee). Tasting a USD 20 Californian Chardonnay should give citrus fruit flavors, hints of melon, vanilla, some toasty character and some creaminess. Burgundy whites can taste very different.

    Claude Vialade Chardonnay

Despite having its origins in western France, Chardonnay's immense popularity and flexibility quickly meant that before long, there wasn't a wine producing country in the world which wasn't investing in this fascinating and versatile grape varietal. Today, Chardonnays manage to win fine wine competitions and satisfy supermarket shoppers simultaneously, due to the fact that this grape varietal can take on many characteristics and features of where it is grown and how it is handled. Indeed, this green skinned grape is renowned for not having so much unique flavor within the fruit, but is very sensitive to the features of the terroir it is grown in, as well as to aging As such, it isn't unusual to find bottles of single variety Chardonnay wine described as holding notes of white stone, mountain waters, or other such geological features alongside the more predictable fruit descriptions This makes Chardonnay grape varietal wines an exciting world to delve into – full of surprises, full of delights. This gives the wine a lovely mineral undercurrent to complement the bright, ripe, yellow stone fruits and soft elegant texture. To add more intrigue, Thinus blends 8% whole bunch, skin fermented Chenin Blanc to the wine to enhance texture, structure and add "zippiness"! This is so drinkable, so easy. 40. Allston Chardonnay

    Allston Chardonnay

Our approach to Chardonnay is one of non-intervention, allowing the fruit and the place to speak for itself, and then layering in our techniques to bring it to its fullest potential. We let the grapes develop fully, which in our vineyards means concentrated and complex layers of fruit, heady evocative aromatics and perfect balance of flavor. We ferment in stainless steel at low temperatures to preserve the intense, complex aromatics, and then age certain lots in 3-year air-dried French oak to accentuate and balance the concentrated fruit, adding another layer of complexity with the subtle, high-quality oak. The result is a rich wine, but with clean, pure layers of flavors and aromatics. Learn More
