    Château Le Payral is a small family-run vineyard which covers 38 hillside acres in the Bergerac and Saussignac appellations on the very edges of the Dordogne, a stone’s throw from the Gironde. Thierry and Isabelle Daulhiac, along with sons Paul and Emilien, are the current owners. In 1992 Thierry inherited the vineyard from his father who had, in turn, inherited it from his father. This sweet dessert wine is sourced from the oldest vines on the estate and is crafted out of botrytised Sémillon grapes in a small portion of the selected parcels with up to four “tries” or passes of the pickers in order to hand select the appropriate grapes from each bunch. It is produced only in vintages that combine moist early mornings with a good amount of humidity and the right amount of sun during the day for ideal ripeness. The resulting wine is absolutely delightful, sweet yet balanced and enhanced by great acidity with honey, apricot, coin fruit and ripe yellow fruit flavors.
