Quick Overview

Bodegas Dios Baco was founded in 1765 by the Vergara family and a British firm. In the early 20th century, Sr. Juan Vergara partnered with Sr. Juan Palomino to form the conglomerate, “Los Doce Disciples,” or the Twelve Disciples. The principal cellar amongst the original twelve was Bodegas Dios Baco. In 1992, the Paez Morilla family bought the property and began extensive renovations in the cellar and the vineyards and the property is currently managed by Jose Paez Morilla. Jose’s mission is to produce handcrafted, small-production lots of traditionally made Fino, Manzanilla, Amontillado, Oloroso, Cream and Pedro Ximenez.

Tasting notes
Viscous, rich and concentrated, this full-bodied Sherry presents sweet aromas and flavors of raisins, plums, dates and nuts. Smooth, honeyed fruit undertones are well balanced by acidity and the finish is long and clean.

91 Points ~ Wine Enthusiast "A sensuous sweet Sherry, this has the full monty of fig, date, licorice, root beer and chocolate aromas and flavors. It’s naturally thick and sweet but also balanced, so it doesn’t come across like a spoonful of syrup. Great as a dessert wine with cake or blue cheese, but also as a topping for vanilla or coffee ice cream."

Technical notes
To concentrate flavors and sugar content, the Pedro Ximenex grapes are spread out on straw mats to dehydrate. Just before the grapes become raisins, the fruit is pressed and the resulting wine is fermented in the Solera method where it remains in barrel for a minimum of eight years.
