  13. Villages De France Pinot Noir

    Villages De France Pinot Noir

    $11.94

    Size 750ML

Pinot Noir translates as 'black pine' in French, and is named as such due to the extremely inky color of the fruits, which hang in bunches the shape of a pine cone. Wineries often struggle with Pinot Noir vines, as more than most red wine grape varietals, they fail in hot temperatures and are rather susceptible to various diseases which can be disastrous when hoping for a late harvest. Thanks to new technologies and methods for avoiding such problems, however, the Pinot Noir grape varietal has spread across the world to almost every major wine producing country. Why? Quite simply because this is considered to be one of the finest grape varietals one can cultivate, due to the fact that it can be used to produce a wide range of excellent wines full of interesting, fresh and fascinating flavors Their thin skins result in a fairly light-bodied wine, and the juices carry beautiful notes of summer fruits, currants and berries, and many, many more. Vintage: 2015

Varieties: A classic blend of noble red wine varieties

    Wine of Origin: Coastal Region

    In the Vineyard

Grapes were sourced from a cross-section of regions selected for optimal expression of each variety. Vineyard tactics included pruning to two-bud spurs, shoot removal, bunch thinning and canopy management for best ripeness and quality. Grapes were hand-harvested from mid-February to late March at an average ripeness of between 21 and 22°B.

    Vinification

To achieve the desired colour, most of the juice was drained directly after crushing, with some blocks receiving up to two hours of skin contact. Each variety was handled separately and fermented cold at 14°C to retain the delicate aromas and flavours. The final blending of varieties created complexity, consistency and balance before bottling.

    Winemaker’s Tasting Notes

    • On the Nose: Enticing crushed summer berry aromas.
    • Palate: Soft and juicy, bouncing with succulent ripe strawberries, raspberries and mulberries tinged with a hint of spice. Finishes with great balance, freshness and fruity intensity.

Blend: 100% Cabernet Sauvignon Barrel ageing: none
Maturation: 1 – 2 years from date of vintage

Cabernet Sauvignon vineyards are managed specifically with the idea of rosé production in mind. Early picking dates result in naturally high levels of acidity and a bright spectrum of fruit aromas ideal in rosé style wines. Once pressed, the juice is handled as per Sauvignon Blanc, i.e. cool fermentation with aromatic yeasts to heighten the vibrant, zesty aromas and fresh mineral palate. Crucial to this style of rosé is early bottling in order to preserve the wine’s inherent freshness.

Serve well chilled. An excellent aperitif or picnic wine. Serve with fresh, seared tuna steaks; veal limone; poached salmon; cold crayfish salad; sushi.

    OUR WINEMAKERS’TASTING NOTES

The colour is inviting, reminiscent of ripe, freshly sliced watermelon. The nose is bright, revealing immediate notes of juicy strawberries, and delicate rose petal aromatics with a nuance of earthy Cabernet Sauvignon savouriness. This beautifully balanced rosé has layers of flavours which contribute to its distinct, complex palate. Fresh acidity and a low alcohol provide the savoury core of this wine, yet the abundance of Cabernet Sauvignon fruit flavours such as fresh strawberries, ripe cherries and subtle notes of white peach provide the immediate joy of a basket of inviting summer fruits.
