VINIFICATION The winery has been conceived to get the grapes to the fermentation vat in record time. The vats are stainless steel, the cleanest material available. "A winery is like a maternity hospital where everything must be spotless, " Georges Vigouroux is wont to say. There are enough vats for long fermentation like in the old days, in order to obtain well-constituted wines suitable for ageing. - Fermentation in stainless steel tanks. - Maturation in 225-liter oak barrels and 75 hl oak vats for twelve months. - Bottled at the Château, and stocked on site for several months before being put on the market. FOOD PAIRING Ideal with game, roasts, stews and any full-flavored dish as well as ripe or flavorful cheeses. TASTING NOTES Gorgeously inky colour. Deep mulberry fruit on the nose. Deep, rich, intense fruit of dark plum, blackberries, spice and liquorice, with mints, sasparilla notes. Palate is full-bodied with a long, clean, fruit finish. AWARDS 91/100 Wine Enthusiast
